Unusual purchase
Hello! I placed an order from a seller, who stated that if I bought more pieces, he would give me a discount. I placed the order, I paid with PayPal, but I had tried to contact the seller beforehand to ask for an additional discount, but got no response, so I thought he couldn’t do any better than that. But after paying, I noticed through the app that on his profile, the same product on another listing was being sold for less. I contacted him again asking for an explanation, whether the product was different or the same, but I did not receive any response. I tried to cancel the order to place it again at the updated price, and the seller, who has never replied to the various messages I sent him through eBay, rejects the order because he claims to have shipped everything, when I can see that even now at 11:20 on 03/05/2024, GLS has not even picked up the package. Now I would like to know how I can protect myself, and how does eBay protect me from a scam like this?

there is no scam here; every seller is free to sell their items at the price they want and has no obligation to reply to buyers' messages.
It was only your responsibility to be prudent and buy the item at the price you considered most suitable for your needs.
If the seller shipped today, it's obvious the courier hasn't uploaded the tracking yet.
If you're not satisfied with the purchase, you can return what you bought at your own expense only if they accept returns.
I would add that you are also an unusual seller... a private individual selling "New" items is not normal!
