I have a doubt: in the register of receipts, do you enter the total amount of a sale or do you subtract the various fees?

For example, on an 8 euro sale (shipping included), you will actually receive 6.50 euros from eBay (the rest is withheld upfront in various fees); what do you record?

Ask your accountant.

The logic would suggest that:

if you have ordinary bookkeeping, you need to enter 8 euros in income and then you can enter the fees when you enter (among the expenses) the eBay fees invoice;
if instead you’re on a flat-rate scheme, just put in the 8 euro incoming payment.
