I need to ship a unique Technogym via freight carrier; I’ll ship it once payment has been received.
Does the shipment of the item take place after the buyer has paid both the deposit and the final bill?

on eBay there is no deposit or final balance...
Once the item has been sold and the customer pays, you only receive confirmation of this fact and, since you are a new seller, your funds will not be paid out to you for at least 15 days, and depending on the amount maybe even longer...
You wouldn’t even be able to ship it... you indicated local pickup only.
