Hello, I wanted to ask you, I'm new as a seller and I have a doubt: when I create a listing it lets me choose the shipping method, but how is the cost actually calculated?

you have to calculate it yourself... only you know what you want to ship, dimensions and weight... you can check the various shipping sites, like Poste Italiane, and verify the actual cost based on your package.
