If a seller ships a package with Poste Italiane but it doesn't arrive at its destination, is the seller protected?

Obviously not.

The buyer paid for an item and, if they don't receive it, you have to refund them. Then you can try to get compensation from whoever sold you the shipping service.

Honestly, from your listings I have a hard time telling whether you're a private seller or whether you have a VAT number, anyway:

Professional sellers are always responsible for shipping until the item is in the buyer's hands (under the Consumer Code).
Private sellers on eBay (and on many other platforms) are responsible for shipping until the item is in the buyer's hands (by implicit acceptance of the platform rules).
